Functional food brand RELEEESE debuted in the UK with RELEEESE Milk Chocolate, a premium bar formulated to deliver the taste and texture of conventional milk chocolate while sidestepping sucrose.
The brand is the official licensee of the Dr Coy formulation — a sugar approach developed by Dr Johannes Coy, the German molecular biologist and cancer researcher who discovered the TKTL1 gene, which underpins much of the modern understanding of how cells metabolise sugar.

How the formulation works
RELEEESE replaces the standard sucrose used in milk chocolate (GI 65) with a patented blend of two naturally occurring, lower-glycaemic sugars:
- Tagatose (GI 3) — naturally found in milk
- Galactose (GI 20) — also naturally found in milk
The brand claims the bar is the world's first chocolate to combine Tagatose and Galactose. The pitch is that the pair delivers sweetness with significantly lower blood glucose impact than sucrose, without leaning on the artificial sweeteners (stevia, erythritol, sucralose) that have driven category innovation but split consumer opinion on aftertaste.
The bar also includes added soluble fibre from corn to support gut health by nourishing beneficial bacteria, plus Vitamin E for antioxidant support. It is non-GMO, gluten-free, and contains no artificial sweeteners.
